Banana Walnut Oat Muffins
1 c. whole wheat flour
½ c. quick cooking oats
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon (can add cloves or nutmeg as well)
½ c. honey
3 tablespoons unsweetened applesauce or light vanilla yogurt
2 tablespoons light butter spread
4 ripened bananas, mashed
½ c. toasted pecans or walnuts (toasting brings out the flavor)
1 teaspoon vanilla extract
Whisk light butter spread and honey together until creamed. Next add in egg and beat, and then beat in unsweetened applesauce, bananas and vanilla.
In another bowl, stir together all dry ingredients. Add to liquid mixture and stir just until combined. Fold in toasted nuts. Scoop mixture into muffin tins sprayed with nonstick cooking spray. Bake at 350 degrees F for 15-20 minutes. Let cool and enjoy.
