Home-style Chicken in Tomato Gravy
8 ounces boneless, skinless chicken breasts divided into 2 equal
2 Tablespoons Wondra Quick-mixing flour
1/4 teaspoon black pepper
1 1/2 teaspoons canola oil
1 small onion, finely chopped
1 large green bell pepper, chopped
1 clove garlic, minced
Dash white pepper
1/2 teaspoon curry powder
8 ounces tomato puree
1 teaspoon parsley, chopped
1/8 teaspoon ground thyme
Mix flour and pepper together in a plastic bag.
Add chicken one piece at a time, shaking to coat.
Heat oil in a medium sauté pan.
Over medium heat, sauté chicken, until brown on both sides and cooked thoroughly (160 degrees)
Remove chicken from pan and keep warm.
In same sauté pan, stir fry onions, green pepper, and garlic for approximately 5 minutes, until onion is golden brown.
Add white pepper, curry powder, tomato puree, parsley, thyme, and chicken.
Simmer chicken in tomato gravy for approximately 10 minutes.
