Oven Roasted Vegetables

Onions
Sweet potatoes
Redskin potatoes
Baby carrots
Whole parsley
Whole rosemary
Granulated garlic
Salt and pepper

Toss all vegetables with olive oil. Season with rosemary, parsley, garlic, salt and pepper. Oven roast at 350 degrees uncovered for 30-45 minutes until golden brown.

You can warm and puree all the leftovers and thin with warm milk for a delicious Cream of Harvest vegetable soup.
