Black Bean Salad

1 can of whole kernel corn or fresh cooked corn cut off the cob
1 can of black beans
1/2 cup of diced green peppers
1/2 cup of diced red onions
1 tablespoon of dried or fresh chopped cilantro
1/2 - 1 cup of medium heat salsa
1/2 - 3/4 cup of ranch dressing

Drain corn and drain and rinse beans. Add diced peppers and red onions. Stir in cilantro, salsa and ranch dressing. Mix well. 

This salad is very versatile. It can be made into a wrap by adding the following ingredients:
Chopped lettuce
Diced chicken
Place in a spinach and herb wrap, or any wrap of your choice.

This salad can also be made into a Southwest Pasta Salad by adding the following ingredients:
1 box of cooked penne pasta
1 cup of diced tomatoes or cherry tomatoes cut in half
2 ounces of diced jalepenos
Additional salsa and ranch dressing to taste
