Salmon Cakes from Fuel

1 pound of fresh salmon, diced
2/3 cup of bread crumbs
1 small cucumber, seeded and diced
1 large shallot, chopped
1/3 cup fresh parsley, chopped
Salt & pepper to taste

Dice salmon and pulse lightly in a food processor. Be careful not to over process. Mix in a bowl with the rest of the ingredients. Season with salt and pepper. Mix lightly but thoroughly. Portion to desired size.
     Heat oil in a saute pan on medium-high heat. Lightly season cakes on both sides with salt and pepper. Saute on medium-high heat for 3-4 minutes on each side, or until nicely browned.
