Shrimp Primavera from Pompeii's

2 ounces of liquid butter substitute over medium heat
6 - 21/25 peeled and deveined raw shrimp
1/3 cup onions
1/2 cup eggplant, peeled and diced in large pieces
4 strips of both red and green peppes, julienned
3-4 broccoli florets
1/3 cup of sliced mushrooms
1/4 tablespoon of chopped garlic
6 ounces of marinara sauce
12-14 spinach leaves
8 ounces of cooked pasta

In a preheated pan, sautee the shrimp, onions, eggplant, peppers and broccoli for 3-4 minutes. Flip shrimp and add mushrooms and garlic. Toss and cook 2 minutes. Add marinara sauce and spinach and toss for 1 minute. Add cooked pasta, toss well and serve.
