Swiss Oatmeal

Servings: 2

1/2 cup old fashioned rolled oats (or thick cut)
1/2 cup non-fat, 1%, or plain soy milk
1/2 teaspoon cinnamon
1 cup blueberries
1 medium banana, sliced
3/4 cup plain non-fat Greek yogurt
1 teaspoon vanilla extract
1 tablespoon chopped pecans, walnuts, or almonds
1 tablespoon ground flax meal
Directions:
The night before: mix oats, milk, and cinnamon in a
tightly covered container. Store in refrigerator.
The next morning: stir in the remaining ingredients.
You can sweeten with some Splenda if you like. If you
like it a little thinner, just add a bit more milk. You can
also substitute your favorite fruit for the blueberries
