Garlic Smashed Potatoes

3 Pounds Yukon Gold Potatoes
1 Cup Skim Milk
1 Cup Shredded Mozzarella
3 Cloves chopped Garlic
Salt & Pepper to taste
Olive oil

The finished product will be lumpy, not smooth like regular mashed potatoes. Cube potatoes, mix with olive oil and place on a sheet pan and roast until tender. Place in a mixing bowl, add garlic and slowly add milk until desired consistency is achieved.  Add mozzarella and mix well.  Add Salt & Pepper if necessary.
